Marshmallow Puffs

Yum! These are not only incredibly delicious, they're also terribly easy. Everyone loved them! Honestly, I wish there was a marshmallow somewhere between the jumbo size and the mini size, since I think these are just a little too large. Unfortunately, making my own marshmallows would then make this a not so very easy recipe, so jumbo it is!

36 large marshmallows (about one bag)
1 1/2 cups semisweet chocolate chips
1/2 cup peanut butter (can be chunky)
2 Tbs butter

Line a 9" square pan with foil; spray with non-stick spray. Arrange marshmallows in pan. In a double boiler or microwaveable bowl, melt chocolate chips, peanut butter, and butter at 50% power. Pour and spread over the marshmallows. Chill completely. Cut between marshmallows. Yield: 3 dozen.

Notes: I chose smooth peanut butter since I didn't really want any speed bumps in this. I'm glad I did. I think the chunks would have annoyed me. When I cut the marshmallows apart, I put them into mini muffin wrappers so they didn't stick together. I don't recall now since it's been so long, but I'm pretty sure I actually melted my chocolate and peanut butter in a double boiler. I could be wrong, though.
