Breakfast Taquitos

I've been struggling with ideas for breakfast in the morning when trying to rush out the door to get Sophie to school on time and me to work on time. An English muffin really just doesn't cut the mustard (and it's a bit messy, at that). It dawned on me to try breakfast taquitos since B is a fan of the taquito anyhow. They're convenient in so many ways. I love how contained they are, and how I can add different ingredients, and how they're great candidates for make ahead meals. I have a feeling I'll be making a batch of these up soon for freezing after our trial run this morning.

Okay, this really isn't a recipe, but more a concept, I suppose.

Flour tortillas
Scrambled Eggs (I make mine just a bit differently)
Veggies, if desired

Lay the tortilla out and put a small amount of cheese in the middle. Avoid the edges for folding purposes (I make a complete pocket instead of rolling for better portability). Lay meat of choice on top of cheese. Lay scrambled eggs on top of meat. Add veggies if desired. Fold top and bottom edges toward the middle and then fold sides over. When cooking, keep folded side on the bottom. I toast mine in the toaster oven for about three minutes. The microwave might work well for this, although I'd be afraid of it coming out a bit tough.

Cheese options are endless really, as are meats. Be creative! Ham and swiss, turkey and havarti, bacon and cheddar, sausage and American, etc. Add some diced fresh tomatoes, bell peppers, onion, or even some shredded potatoes. Take your favorite omelet ingredients and put them in the taquito!

This could work for a quick lunch idea as well. Take basic sandwich ingredients and put them in the tortilla. Take favorite pizza toppings and put them in the tortilla. The possibilities really are endless with this.

I'm sure I'm not the first person to come up with this and I won't be the last, but I just had to post it here. Please share your favorite combination!
