Turkey Salad Sandwiches

It's leftover time, and turkey salad is one of my favorites. We were low on various common ingredients and I think the recipe we came up with turned out better than any other turkey/chicken salad I've ever had before. There are no measurements, since this is one of those recipes I have always just sort of "eyeballed" when I make it.

leftover cooked turkey, dark or white, diced
apple, diced
cherries, pitted and quartered
pomegranate seeds
salt and pepper to taste
coleslaw mix (not mixed with dressing)

Mix the turkey, mayo, apple, cherries, and pomegranate seeds carefully. Place a bit of coleslaw mix on the bread and then place a bit of the turkey salad on top. Serve and enjoy!

Notes: Obviously, this is stupid easy. The mayo depends on how dry/moist the turkey is. Other additions to consider might include celery, grapes, nuts, jicama, craisins, etc. The pomegranate seeds are slightly distracting but very tasty, nonetheless. We used ciabatta bread, but pitas would probably be a better option. Croissants would be fabulous for this as well. I would definitely avoid mixing the coleslaw into this, since the cabbage will only turn mushy and not be nearly as pleasant if there are leftovers.
